Ingredients:


Beef Marinade:
8oz Beef sliced across the grain
1 Tablespoons cooking wine
1 teaspoon dark soy sauce
1/2 Tablespoon corn starch

Veggies
Sliced onion
Green onion cut into pieces 3/4 to 1 inch in length
Chili peppers cut into slices
1/ 4 teaspoon chopped garlic
1/4 teaspoon grated ginger

Thickening Slurry
1/2 Tablespoon corn starch
1 Tablespoon Water

For Sauce:
1/4 cup chicken stock
1/2 teaspoon sesame oil
1 teaspoon dark soy sauce
1 Tablespoon oyster sauce
1 teaspoon raw sugar

First marinade beef with cooking wine, dark soy sauce and corn starch. Let marinade for 15 to 30 minutes.

Make slurry 1 Tablespoon water and 1/2 Tablespoon corn starch.

Make sauce, add all sauce ingredients, mix and sit aside.

When the pan is hot add oil then beef. Cook until meat is 75 to 80% done, remove from pan.

Cook onion, green onion and chili. When they are almost dome add sauce. When sauce starts to boil return the beef to pan. Add slurry and mix until sauce is thick. Turn off heat and remove from pan.

Serve with rice or noodles.

Beef with Broccoli recipe

6 oz sliced beef (I used Flank Steak)

Marinade:
1/2 Tablespoon Rice Wine
1/2 Tablespoon Dark Soy Sauce,
1 Tablespoon Corn Starch

Sauce:
1/4 Cup chicken Stock
1 Tablespoon Hoisin Sauce
1 Tablespoon Oyster Sauce
1 Tablespoon Brown Sugar
1/2 Tablespoon Dark Soy sauce
1 teaspoon Sesame oil

Sliced Onion
1 teaspoon Garlic
1/2 teaspoon Ginger
Blanched Broccoli

Peanut Oil
Corn Starch Slurry.

Add marinade to beef, let sit 30 minutes or so.
Add peanut oil to hot wok and swirl.
Add meat to wok and sear. Cook to about 80% done and remove.
Add onion to wok when it starts to get some color add ginger and garlic. When fragrant add sauce.
Heat sauce until it starts to boil then return meat.
Add broccoli and mix.
Add some of the corn starch slurry.

 Chicken and Asparagus Stir Fry

Recipe:
8oz Sliced Chicken Breast
Marinade Chicken with
Splash of Rice Wine
Splash of Soy Sauce
1-teaspoon Cornstarch

Sauce:
½ Cup Chicken Stock
3 Tablespoons Black Vinegar
2 Tablespoons Dark Soy Sauce
¼ Tablespoon Sugar

Veggies:
½ Tablespoon Ginger
½ Tablespoon Garlic
1 Bunch Asparagus
Sliced Onion

Cooking Oil (I like peanut oil)

Thickening Slurry: 2 Tablespoons Chicken Stock & 1 Tablespoon Cornstarch

Chicken with Broccoli Recipe

The Broccoli gets steamed and the chicken get velvet ahead of time so this is a dish that can be cooked very quickly once all of the prep is done.
Marinade:
8oz Chicken
1/2 Tablespoon Rice Wine
Splash of Soy Sauce
1 Egg White
1/2 Tablespoon Corn Starch

Sauce:
1/4 Cup Chicken Stock
1 Tablespoon Soy Sauce
1 Tablespoon Hoisin Sauce
1 Tablespoon Honey
1 teaspoon black vinegar
1/2 teaspoon Garlic
1/2 teaspoon Ginger
1/2 teaspoon sesame oil
Pinch of White Pepper

Thickening slurry:
Water and corn starch (I normally use 2 Tablespoons water and 1 Tablespoon corn starch)

Coat Chicken with marinade and set aside.
Make sauce.
Steam Broccoli until just tender then rinse with cold water.
Add chicken to slowly boiling water. Stir quickly to prevent sticking and turn off heat. Stir for about 2 minutes until chicken is opaque. Remove from water, drain and let cool.
Heat wok on high heat, add oil and swirl.
Add chicken and cook until it gets just a bit of color.
Add sauce when starts to boil add Thickening slurry. When sauce is desired thickness turn off heat and serve.

Chicken Fried Rice
 Cooked rice: 4 cups
 Chicken: 3.5 oz
 Chopped beans: 1cup
 Chopped carrots: 1cup
 Chopped peas: 1/2cup
 Chopped spring onions 1cup
 Chopped garlic: 8-10
  Eggs: 2
 Chilli garlic sauce: 1 tbsp
 Dark soya sauce: 2 tbsp
 Oyster sauce: 1 tbsp
 Aginamoto or MSG (Monosodium glutamate): 1/2 tsp
 Salt to taste
 White pepper powder: 1 tsp
 Oil: 7 tbsp
